Baked Parmesan Chicken




This weekend I was sick and it was raining. Not a very fun weekend. I did get to stay in and cook up a new recipe with the boyfriend. Not all that new. I have made chicken parmesan before, but this time I made it without noodles. Why? Because its healthier. This recipe only has 520 calories and 0 carbs! Well I made some pasta for the boyfriend who can eat anything without gaining any weight. Hate him. haha.

Here is the recipe I used.

Ingredients:
1 cup mayonnaise
1 cup grated Parmesan cheese
1 tsp Italian seasoning
2 lbs fresh boneless, skinless chicken thigh cutlets
1/4 tsp salt
1/8 tsp ground black pepper

Method:
1. Preheat oven to 400°F.
2. In a small bowl combine mayonnaise, Parmesan cheese and Italian seasoning.
3. Season chicken on both sides with salt and pepper and place in a single layer in a 8-inch square baking dish.
4. Generously spread with sauce and bake for 20 minutes, or until done. Serve warm.

I wore this out for a few errands with the fiance. My car battery needed replacing, I have worn that thing out. Ex. leaving it on while taking naps during lunch. Don't do this ladies. Ha! This look is so comfy and definitely a repeat when I'm running around town.

outfit of the day: classic vest

  what i wore: express button up, old navy vest, f21 jeans, gift boots.   Classic pieces stay for a lifetime. I have had this vest for a long time. Traditional yet in style. Not popular, but likable. A little bit of old fashion and tradition may not be popular, may go back "50 years" but this vest seems to never fade out of style for me.
